Daniel Rudolf began in kitchens, not drawing rooms. He served his apprenticeship in a restaurant in Worms, the town he grew up in, then cooked his way outward — a cruise ship, London, Ibiza, St. Moritz, and later kitchens with Michelin stars. "I made schnitzel and so on. Back then I thought I could cook," he told the German press agency dpa. "Today I know I couldn't."

In his early twenties, a friend's introduction placed him as private chef to a princess. The job quietly became a different one. He was learning which side of a staircase to walk on, how to hand a lady into a car, where to stand and when to anticipate. "It was hard," he said of that period, "but I learned an enormous amount." He formalised it at the British Butler Institute in London, and was recommended from one household to the next thereafter.

The work has since taken him to more than forty countries — the United States, Europe, the Middle East, the Caribbean — running estates, wardrobes, private jets, yachts and the staff who keep them. In 2015 he took a post in New York with a Swiss-British family and their three small children: four months at a stretch, seven days a week, fourteen hours a day, then two months off. He keeps thousands of documents recording what his principals prefer — what they eat on the jet, which pillow travels with them, where they like to shop. He describes the role himself as being a nanny for adults.

The eye does not switch off. Interviewed in New York at half past nine at night, after twelve hours of work, he broke off mid-sentence: "That carpet back there has a ripple in it. I can't bear to look at it."

Mallorca is where he settled and where he founded Xclusive Mallorca, a concierge service for the same clientele, working with villa management, smart-home integration, staff placement, yacht charter and private aviation.
